Ingredients

Base

  • 1 block firm tofu drained, not silken
  • 1/3 cup dairy-free yogurt plain, coconut or almond-based

Flavoring & Texture

  • 1 tbsp lemon juice freshly squeezed
  • 2 tsp apple cider vinegar
  • 1 1/4 tsp salt or to taste
  • 2 tsp white miso paste
  • 1 tbsp nutritional yeast | optional
  • 2–4 tbsp plant milk unsweetened, adjust for consistency
  • 1 tbsp refined coconut oil melted, optional

Instructions

  • Prep the Tofu:
  • Drain the tofu well and pat it dry using a clean kitchen towel.
  • Cut it into chunks.
  • Crumble half of the tofu into a medium bowl using a fork to create a curd-like texture.
  • Make the Creamy Mixture:
  • Place the remaining tofu chunks in a blender or food processor.
  • Add the dairy-free yogurt, lemon juice, apple cider vinegar, salt, white miso paste, and nutritional yeast (if using).
  • Blend until smooth, adding plant milk one tablespoon at a time until the mixture is creamy but not runny.
  • Add melted coconut oil if using.
  • Combine and Stir:
  • Transfer the creamy mixture to the bowl with the crumbled tofu.
  • Stir gently to combine until the texture is both smooth and chunky.
  • Chill and Serve:
  • Let the mixture rest in the refrigerator for at least 1 hour to allow the flavors to blend.
  • Stir again before serving.

Notes

Tips:
  • For a slightly tangier flavor, add extra lemon juice or a touch of mustard powder.
  • For a creamier texture, increase the yogurt and use less crumbled tofu.
  • Add chopped chives or dill for a savory twist, or cinnamon and berries for a sweet variation.

Substitutions:
  • Use oat or soy yogurt instead of coconut or almond.
  • Skip the nutritional yeast if you don’t want a cheesy flavor — it’s optional.
